Brown Bread Recipe

The students from school will source different and traditional foods from the local area and put them up on this website. This first recipe has been contributed by Maura Marron of Corrybracken, Magheracloone. It is brown bread, which is a very popular food item eaten at every meal in all of the local homes. It will take 45 minutes to bake at 200C. You will need the following to make 2 sandwich cakes and 2 loaves of Brown Bread:

1lb Flour (plain)

3ozs Oatmeal

2ozs Oat Bran

11/2 Wheaten Meal

2ozs Wheat Germ

2 teaspoons Salt +2 teaspoons Corn Oil

4 ozs Wheat Bran

3 teaspoons Breadsoda

11/2 Litres Buttermilk

First you put all the dry ingredients into a mixing bowl. Then you pour in the wet ingredients and mix well.

When the mixture is ready take it out of the bowl and knead it. If you find it sticking to the board you can sprinkle a little flour to remove the stickiness.

Cut the mixture into four even pieces and knead separately.

Place one piece of the mixture into each tin and spread out until fairly level. Then gently cut cross on top of tins to help release the air bubbles.

When cakes are golden brown, take out of the oven and take out of the tin. Leave to cool on a wire rack for 30 minutes.
